Basil cashew spread

1 cup raw cashews soaked for several hours or over night (the longer you soak them the smoother the spread will be)
1 tablespoon fresh lemon juice
2 tablespoon organic olive oil
1 shallot
1 tablespoon white wine
1 teaspoon Celtic sea salt
1 tablespoon fresh basil (more if desired)
juice from 1/2 of a lemon
black pepper to taste

Place the cashews in a bowl with the 1 tablespoon fresh lemon juice, cover with filtered water and allow to sit for several hours or over night. Drain and rinse the cashews. Add the cashews olive oil, shallot, wine, salt, basil, lemon juice, and pepper to a food processor and blend until smooth. Enjoy on sandwiches, as a dip, with falafels, on pizza, and so on.
