Cupcakes
1/4 cup coconut flour
1/8 teaspoon Celtic sea salt
1/4 teaspoon baking soda
3 large eggs
1/4 cup coconut oil, melted
2 tablespoons raw honey
1 tablespoon vanilla extract
1 teaspoon almond extract

Frosting
1/4 cup cocoa butter wafers
2 tablespoons raw honey
1 tablespoon coconut oil
1/4 teaspoon almond extract
2 teaspoons coconut milk

method

In a large mixing bowl combine eggs, coconut oil, honey, vanilla extract, and almond extract. Mix to combine. Add salt, baking soda, and coconut flour. Mix to combine. Let mixture sit for a moment to allow it to thicken. Spoon into small muffin cups. Bake at 350ºF for 25 minutes; cool.

In a double boiler gently melt cocoa wafers, honey, and coconut oil. Remove from heat and whisk in almond extract and coconut milk. Place in freezer; check and stir until it is just beginning to set. Remove and frost cooled cupcakes.
