Banana Egg Pancakes

2 eggs
1 large banana
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon

Peel and break banana into a large glass measuring cup. Mash with a fork. Add eggs, nutmeg, and cinnamon. Whisk until well combined.

In a frying pan on medium heat, melt a bit of coconut oil to coat the bottom of the pan.  Pour batter into the pan to make medium-sized pancakes. Cook until bubbles begin to form on top, then flip and cook the other side. Continue until all the batter is used.

Serve with a sprinkle of cinnamon and a bit of jelly or jam.
