3 cups blanched almond flour
1/2 teaspoon Celtic sea salt
1/2 teaspoon baking soda
1/2 cup unrefined organic coconut oil
1 tablespoon vanilla extract
1/2 cup pure maple syrup
1/2 cup dairy free chocolate chips or chopped dates, pitted
These are by far my favorite gluten free, vegan bars/cookies. They are soft, chewy, sweet and so simple to make. Have fun with them by adding nuts, seeds, or extra dried fruit.
methodIn a large mixing bowl, combine almond flour, salt, baking soda, coconut oil, vanilla extract, and maple syrup. Once well combined, add chocolate chips or dates; stir gently to combine.
Pour bar mixture into an 8×8 pan and press down gently with a spatula. Bake at 350ºF for 20 to 25 minutes or until the edges begin to brown. Cool and enjoy.
