cream of broccoli soup

4 cups filtered water
1/2 organic onion, chopped
4 garlic cloves, diced and allowed to rest for 5 minutes
4 cups sweet potatoes, peeled and roughly chopped
1 can organic full fat coconut milk
1 1/2 teaspoon Celtic sea salt
1/2 teaspoon black pepper
5 cups organic broccoli, diced

method

In a large dutch oven over high heat, add water, onion, garlic, and sweet potatoes, reduce heat and simmer potatoes for 10 to 15 minutes or until they are tender when pierced with a fork. Using a hand held potato masher, mash potatoes until there are only small chunks left. Add broccoli, salt, and pepper. Simmer for 5 to 7 minutes for until broccoli is easily pierced with a fork. Add the coconut milk, stir to combine. Enjoy.
