nutmeg ice cream

1 cup raw cashews, soaked overnight in water to cover plus 1 tablespoon fresh organic lemon juice
7 dried dates, pitted
1 can organic full-fat coconut milk
1/2 vanilla bean, seeds scraped
1/2 teaspoon fresh nutmeg
1/2 teaspoon fresh ginger

Place soaked cashews, dates, coconut milk, vanilla bean seeds, nutmeg, and ginger in a blender.  Blend until mixture is smooth, pour into a freezer- proof dish (or use a loaf pan) and freeze. Remove from freezer and let stand on the counter for 10 to
15 minutes to allow ice cream to soften.
